So the other night the hubs was going to have to work late. And he asked if I could bring him dinner and stay and eat with him. So in my quest to look like the got-it-all-together military wife I pulled out my mother-in-laws amazing and simple taquito recipe! It's so yummy and it looks and sounds like it takes more work than it actually does. (Those are my favorite kinds of recipes. Ones that make me look like super woman when really it was nothing.) Plus this is an easy recipe to modify to make vegan for me and still have meat in the hubs dinner. Also easy to pack and travel with. So let's get to it! (I apologize in advance for the blurry photos. Just roll with it.)
The first thing you gotta do is make the secret spice mix. I guess it's not so secret since I'm posting it online. But yeah. It's:
1/4 cup paprika
2 teaspoons cayenne
2 tablespoon salt
2 teaspoons ground white pepper
2 tablespoons black pepper
2 tablespoons granulated garlic
2 tablespoons chile pepper
2 tablespoons oregano
Just mix all those things together! I keep mine in a Tupperware cause I can use it for other things too! Great spice mix to have on hand! You could probably skip this and use taco seasoning or something like that. But this is so much better and so easy that it seems silly not to make it.
I served my taquitos with Spanish rice. Obviously you can serve it with whatever you want but I throw my rice in a rice cooker according to directions and add about a tablespoon of the spice mix. It would be good to make a spicy quinoa too!
My hubs is not vegan. So I oblige and make non-vegan things for him and he makes vegan things for me. We make it work. But anyway. So I cut up some chicken breasts and heated some olive oil in a pan and then threw some of the spice mix on that chicken and rubbed it all in. Then I cooked it in the olive oil until it was cooked through. Just a few minutes. Then I took it out and set it aside on a plate.
Next comes the filling! Chop up some onion and throw it in the pan that the chicken was in. (If you're choosing to make it without chicken then just heat a pan with some olive oil.) Put in a little crushed garlic. I used the pre-crushed stuff in a glass jar. I'm just lazy like that. Saute that up and then add 2 table spoons of the spice mix. Get it all mixed up good! This would be the time to add the chicken back in if you're using chicken for all of the filling but I kept it out.
Then add in your 10oz can of diced tomatoes with green chilies!
Once everything is all nice and hot and yummy looking whip out those tortillas! The ones I bought were too tiny and didn't roll well. But they were fresh made in our local grocery store. Like they were still hot when I grabbed the bag of them. So how was I supposed to say no to that and go find bigger ones?! Obviously I needed these fresh, hot, tiny ones. So take your large tortillas and fill them with the mixture you just made! I filled mine with the tomato mixture and rice and the hubs with tomato mixture and the chicken.
Then heat a pan up of veggie oil. Medium- medium high heat. Wait until it is hot before you put anything in there. As you can see I didn't and that first one is not beautifully crispy but rather soggy and greasy. Also I overstuffed it and everything fell out. It was kinda a mess. But I learned from my mistakes and persevered!
They then looked like this plate of beautiful, golden, crispy creations!
I only had a couple tortillas left when I was done so I cut them up and threw them in the hot veggie oil to make some tortilla chips and the put them on a paper towel and salted them! Very yummy addition to the meal!
Then I got two Tupperware containers and packed them with the rice, taquitos, and tortilla chips!
So there you have it! Easy-peasy and super easy to pack up! And sounds and looks pretty impressive. Enjoy! And let me know what you think!
