I love stuffed peppers. Mostly because you can put just about anything in a bell pepper and it's gonna be awesome! Most of my stuffed pepper go to's come from times I've stuffed peppers from cleaning out leftovers in my fridge. The Italian stuffed bell peppers are an easy staple for your meal planning! So without further adieu:

Preheat your oven to 375 degrees Fahrenheit.  

 

So you're gonna start out by cooking your Italian "sausage." I'm using a vegan sausage but you can use any Italian sausage your heart desires! (For some reason my sausage pic isn't loading. So click here to see the sausage I use.) 

Heat a large skillet over medium-high heat with olive oil. Add sausage and half a chopped onion to the pan. Once onions are cooked through and meat is browned add one tablespoon of minced garlic. (Or three minced cloves if you're using fresh garlic.) Turn heat to medium and cook for about three minutes.

Chop up a bell pepper (only one. The rest you're gonna stuff) and red cabbage and grab a handful of shredded carrots. (Or shred some carrots if you're hardcore like that.)

Throw all that yummy veggie goodness into your pan with the sausage, onion, and garlic.

Add two cups of cooked quinua. (I had some leftover in the fridge. Great way to get rid of leftover quinua) You could substitute for cooked rice or couscous if ya not feeling the quinua. Then add one can of diced tomatoes and cook until all the ingredients are heated. Turn to low and put a lid on it.

While you're yummy stuffing is chilling on low then slice some bell peppers in half. Place them in a baking dish and stuff! Fill them buggers up! You can also just chop the top off and stuff them. They'll probably hold more. Actually I'm not sure why I cut them in half instead. Follow your heart guys. Cut the peppers the way you want them cut! haha! Okay enough! Moving on!

Add a bit of water to the bottom of the pan. Not a lot. Just enough that they won't burn. Then cook for 25-30 minutes until your peppers are nice and tender!

Serve with a side of your choice. I roasted some potatoes with Italian seasoning. Yum!
