To be honest with you this recipe is so simple I'm not even sure it can be called a recipe. I just threw it together while working today. I booked a new online jewelry party and had to get to work on it asap! So no time to really cook much and I needed something other than chips and guac and certainly no time to go out for lunch. So I made this and it is soooo yummy!
So here's how it goes. (Sorry there aren't more pictures. But if there were more pictures you'd spend more time looking at this post than making your lunch!)
Grab a can of diced tomatoes and a can of chickpeas. Drain and rinse the chickpeas and then add both the chickpeas and the tomatoes to the sauce pan. Throw in about a cup of leftover quinua. Or make quniua and then add this stuff. Either way it is still an easy meal. Then add in about 1 tsp of minced garlic, 1 tsp of Italian seasoning, and salt to taste. Stir. Put it on medium high heat until it's starting to bubble. Then that's it! enjoy!
